Abstract: ruits and vegetable add flavor and variety to the human diet and supply essential nutrients such as vitamins and minerals. They are also a source of complex carbohydrates and antioxidants which are important to human health. Increasing awareness of the links between diet and health has resulted in greater consumption of fruits and vegetables. Consumers are also increasingly concerned about the safety of the food they eat and the public demand foods that are free of microbial toxins, pathogens, and chemical residues. Safer and more efficient preservation techniques must be developed to meet these demands
